Basic Seasoning Recipes for Archipelago Cuisine

Indonesia has a wealth of many types of specialties from many regions. Yep! Cuisine of the archipelago is also inseparable from the many kinds of spices like galangal, kencur, key meeting, ginger, turmeric, candlenut and so on.

Even though it uses many kinds of ingredients, it's not difficult to cook typical Indonesian food. Enough with these four basic ingredients you can cook many kinds of dishes, you know! Come on, look!

1. White base seasoning

A lot of dishes can be cooked with this white spice. Usually this white spice is used for dishes like Opor, Semur, Fried Rice, Botok, Bacem, etc. It tastes more savory and is very often used.

The ingredients:

  • 5 garlic cloves
  • 6 red onion cloves
  • 3 pecan nuts
  • 1 segment of ginger
  • 1 tsp pepper
  • Adequate sugar and salt
  • Cooking oil

2. Yellow base seasoning

Who likes to eat soup? Try cooking yourself using a yellow base spice. You can also cook other dishes like Curry, Yellow Pickles, Laksa, Pepes Ikan, Bumbu Ungkep, even Ayam Betutu, use this spice you know!

The ingredients:

  • 5 garlic cloves
  • 6 red onion cloves
  • 2 turmeric segments
  • 1 segment of ginger
  • 1 tsp pepper
  • 1 segment of galangal
  • Adequate sugar and salt
  • Sufficient oil

3. Orange basic ingredients

Slightly in contrast to the yellow spices, orange seasoning adds large red chili as a base ingredient. It feels a bit less spicy. You can use Pesmol, Gule, Ati Ampela Fried Sambal, Vegetable Lodeh, Krecek, etc.

The ingredients:

  • 5 garlic cloves
  • 6 red onion cloves
  • 2 turmeric segments
  • 1 tsp pepper
  • 1 segment of galangal
  • 3 large red chillies
  • Adequate sugar and salt
  • Sufficient oil

4. Basic red spices

Even though the color is more similar to the basic orange spice, the red spices have a more spicy taste. This spice does not use turmeric, galangal and ginger, so it is not unpleasant. Usually used for cooking Rendang, Sambal Goreng, Dry Potatoes, Balinese Chicken, Dry Tempe, Sate Lilit Seasoning, and so on.

Ingredients:

  • 6 red onion cloves
  • 5 large red chillies
  • 1 tomato
  • 5 paste
  • Adequate sugar and salt
  • Sufficient oil
